Great Lent is always a time to remember all that the Lord Christ did for us, even to redemption on the cross. This wonderful gift can help us put our main focus on our spiritual food during the forty-day fast, and to give up, freely and by our own choice, everything the body craves… Some of us give up meat, and others also dairy products and fish…
But some people don’t know what to eat during Lent, even though there are lots and lots of dishes suitable for fasting. Here are a few examples that I make myself for my family:
1 – Spinach rolls with onion and garlic, or with cheese
2 – Lenten hamburger: soy patty with onion and barbecue sauce
3 – Syrian kibbeh nayyeh without meat
4 – Kibbet hileh (“trick” kibbeh, without meat)
5 – Kibbeh zenkaliyeh
6 – Vegetable salads… potato salad, eggplant salad, fattoush, tabbouleh, spinach
7 – Assorted Lenten stuffed vegetables,
without meat… or yalanji
8 – Pizza with vegetables and olives
9 – Eggplant maqloubeh with rice
10 – Mloukhieh with oil
11 – Falafel
12 – Okra with oil
13 – Rice with oil and vegetables
14 – Swiss chard with chickpeas (rabba’iyeh)
15 – Grilled eggplant rolls with herbs
